Recipe for Delicious

Thai Peanut [Ramen] Noodles - this is my new favorite recipe, that I made up myself. Best part about it - it usually takes about 20 minutes, tops, to prepare. If you do it in the order I've listed, everything should be ready around the same time and hot for eating. I make it veggie, naturally, but I think some chicken thrown in would also be delish, if you're into that sort of thing.

These amounts are for 1 person, about 2-2.5 servings. Doubling the amounts or playing with the ratio of noodles: veg: sauce may work better for you. (The way it is below is pretty saucy; if you want less sauce, then either half it or double the other ingredients, use same amount of sauce.) Don't worry if there are leftovers - I almost love this stuff better cold than hot!

Ingredients:
1 packet of Ramen noodles (doesn't matter what flavor)

1/2 package of frozen mixed veggies (I like to corn, green bean, carrots, butter bean mix, but you can try any mixture you want)

Thai Peanut Sauce
1/3 cup Natural* peanut butter
1/3 cup water
1 tsp Garlic powder (or garlic)
1 tsp sugar (* If you do not use Natural peanut butter, you might not need/want to add the sugar because other peanut butter already has sugar in it.)
2 Tbsp lemon juice
2 Tbsp soy sauce
Cayenne pepper - however much/little you like

1. Boil water (seriously, just boil some water, any amount enough for the noodles to cook)

2. While water is boiling, prepare the veggies per package directions - either stovetop or microwave (usually 6-8 mins)

3. Mix together Thai Peanut Sauce ingredients in microwable bowl

4. When water has boiled, prepare Ramen per package directions - cook for 3 mins (do NOT add the seasoning)

5. While Ramen is boiling, microwave the Peanut Sauce for 30 seconds.

6. Drain veggies and noodles.

7. Throw veggies, noodles, and sauce in same pot. Eat!

I love peanut sauce and am totally clueless about how to make it. I with Megan - this has definite lunch appeal! :)
